In many parts of the world, it may not feel like summer is here yet but worry not, it will be soon! And what better way to celebrate it than by trying some awesome healthy grilling recipes?

Of course, the best grilled foods are made over the wood fire, because the food really can’t taste much better than that. However, most of these healthy grilling recipes can be prepared on the stove top in a grill pan, or using an electric/gas grill.

To be honest, I could eat grilled foods every day and never get tired of it, but they do make a lot more sense when you’re throwing a backyard party. After all, company matters, right? Here we go!

Olive Oil Parmesan Grilled Corn

Grilled corn is a staple, but you can step back from the classic butter & salt combo by spicing your corn with olive oil, parmesan and basil instead. Or mix it up and throw in some garlic and you will eat pesto corn instead.

The Hawaiian Huli Huli chicken is now a traditional American dish, and it’s super easy to make. However, the chicken does need to be marinated for at least 8 hours, so plan ahead for this one. It will be worth the effort!

Grilled Eggplant Salad With Mustard Vinaigrette

I saved the best for last (or at least this is my version of ‘best’). Eggplants taste most amazing when they are either cooked whole over the wood fire (and then peeled) or grilled. If you never ate grilled eggplants before I suggest you skip the mustard vinaigrette and use soy sauce instead. Or if you’re feeling a bit more adventurous go with Worcestershire sauce.
